A sandwich and some carrots and hummus, does it get more classic than that?
When I’m pressed for time, I throw together a sandwich to bring with me for lunch at work. Typically, my sandwiches consist of some Genius gluten-free
seeded loaf topped with red pepper hummus, greens, roast chicken slice and some cheddar cheese. Served up with a side of carrots and hummus (not chips!), and there you have a super easy, relatively healthy lunch.
Back at home in the US, I would definitely have turkey instead of chicken, but it is so hard to find here! Kinda funny. The cheddar and hummus here are WAY better than back home, so I certainly cannot complain!
